Looks to me like your doing a great job. As you seem to be capable with fibreglass you could probably reinstate the roof by bending some sheet to shape to form a temporary mould. Laminate the shape trim then form another temporary mould to form the recess for the door frame. Once your happy grind back the joint line outside and laminate over. Flat that back flush fill and fair as necessary.
